Baking and Planning
I spent my rainy, grey and windy Bank Holiday Monday tucked up in my kitchen, with Sex and the City playing in the background and Rasputin keeping a close eye on things. I haven’t had the time to bake for so long, so it was nice to get back into the swing of things!
The muffins above are banana and blueberry, and are loosely based on this recipe from Fat Free Vegan Kitchen. I added half a cup of golden caster sugar, plenty of spices like cinnamon and nutmeg, vanilla, 2 tbsp of vanilla soya yoghurt and I omitted the agave nectar. I also added the equivalent of one egg in powdered egg replacement, and some extra soya milk to make the batter smooth. I also used self-raising wholemeal flour. And made muffins instead of bread. But apart from that it’s the same recipe, haha!
I brought a tiny pot of jam to have with these muffins, but they were so moist that you just have to eat them as they are! The blueberries give little bites of sweetness, delicious.
Next on the menu are some apple and white chocolate bars, from the brilliant Averie at Averie Cooks. I didn’t make the caramel sauce to drizzle over the top, but these bars are super gooey and oh-so-delicious on their own so I think it’s ok. These bars contain peanut butter, apple sauce, oats… they are just so more-ish!
I hope that you all enjoyed your long weekend! It was so hard to get up this morning, I just wanted to stay in bed with Mr T and Rasputin.
This week I plan to:
- Apply for lots of jobs and make a plan for the next few months
- Decide what to bake for our office’s version of The Great British Bake Off! I’m thinking carrot cake…
- Decide how to spend the money that my lovely Motherbear gave me for Easter. Either haircut (sensible and much needed, but an expense I can live without), clothing (not sensible but very nice!), saving for America (not a great deal towards the holiday, but better than nothing!) or a new pair of Levis (not sensible but very much needed!).
