WIAW – My First Time!
I’ve been a huge fan of Jenn’s WIAW but never seemed to get around to putting together my own What I Ate Wednesday – this week I was determined! Here are my eats of the day!
I eat my breakfast and lunch at my desk, so have all of my food for the day packed up in my spaceman lunchbox.
Breakfast is a bowl of Dorset Cereal’s Tasty Low Fat Flakes, topped with chopped, fresh strawberries and plenty of Peanut Butter & Co – Smooth Operator, and Alpro Soya Milk – Original. With an essential mug of coffee and a pint of water.
Lunch is a salad with a base of salad leaves, chopped yellow pepper, giant couscous, diced gherkin and dressed with balsamic vinegar. I’ve got some Ryvita Multi-Seed Thins, houmous and some Taifin Smoked Tofu on the side. After this I had an apple and a clementine.
As an afternoon snacky I had some of these gorgeous Kallo Organic Dark Chocolate Rice Cakes. They’re so delicious!
When I got home I snacked on a handful of these SPICY roasted chickpeas – yum!
Dinner was cumin-spiced baked squash, with a salad of lettuce, yellow pepper, gherkin, giant couscous and balsamic vinegar. On the side I had some pitta bread and houmous. Delish!
Followed by a cup of vanilla soya yoghurt – I’ve been craving this a lot lately, and I’m completely in love with the flavour.
So those are my eats for the day! I don’t usually have salad for both my lunch and my evening meal, but things are quite hectic at the moment and sometimes a salad is all I can be bothered to throw together! The baked squash was divine, and as Mr T put it; cumin and butternut squash are perfect for each other <3
I’ve enjoyed my very first WIAW, and will really try to contribute more frequently from now on!
