Simple Sweetness
Sometimes you need to look around you for inspiration, and that’s exactly what I was looking for when I was reading through Maple Spice this morning. I’ve been in love with this blog for many years; the recipes are just so brilliant! Whatever style of cooking you have in mind- a grand, celebratory birthday cake, a romantic, simple dinner, or something which you never thought could be vegan– there will be something in this blog which excites you and forces you into the kitchen.
I’m been thinking about muffins a lot lately- not sugary, triple chocolate mountains, but more like the kind which are naturally sweet and wholesome. Well, this was the plan. Until I came across this recipe for banana white chocolate muffins. I had some bananas sitting on the edge of the fruit bowl which were getting browner by the second, and a bag of white chocolate buttons perched on the top of my snack box, staring at me every time I opened the cupboard. Perfect!
I made a couple of changes to this recipe; I added the broken buttons into the mix rather than drizzling them melted on top. I also used a tube of egg replacement instead of using the recipe featured.
Delicious slightly warmed with a large mug of coffee. Perfect for a mid-morning snack, light enough not to send you into a coma after lunch, or break them apart and serve them with some banana ‘soft-serve’. Enjoy ♥
