Marshmallow Love

Lately I’ve totally got my baking energy back; I’ve been flicking through my dozens of recipe books and searching for inspiration online. I recently purchased a packet of Sweet Vegan mini marshmallows, and began hunting for recipes to experiment with these beauties. I decided on some simple marshmallow squares – I used to absolutely love these in my pre-vegan (and possible they may even be pre-veggie?) days, so I was super excited to try this recipe out. So simple; I think this took me around 5 minutes to smash together. Even better!

I used a really simple recipe from Nigella, omitting the edible glitter (?!) and dividing the recipe given by about 6. This filled a cake tin and produced eight pieces. Gooey and sweet and delicious. Eat these as soon as they have set and you can divide them up. I can’t imagine that they would be so great the next day. Not that I can tell, they’ve already been munched!

    These look lovely! I actually have a marshmallow making kit that I got from my birthday, so once I make them, then I’ll make these!

    Why would anyone want to eat glittery food?!
