Gin and movies

January 30, 2012

After realising from my previous blog that I had completely failed in rustling up four new dinners, I decided that I couldn’t put this off any longer and had to make something new this weekend! Sunday’s are the perfect time to try out new recipes, as you’re not rushed and can buy all of your ingredients in advance, planning out how to make something in your own time.

Stuffed butternut squash with mushroom and brown rice, with spicy roasted broccoli and almonds.

The baked squash was based on a recipe from Not Just Apples, but I also added some garlic and lemon juice to the rice. It still didn’t have a great deal of flavour, so if I made it again I would add a lot more ingredients, and a much more generous squeeze of lemon juice. The squash was delicious, and the perfect basket to carry plenty of different combinations. The broccoli was absolutely brilliant, and came from My New Roots. I’m definitely making this again!! I love broccoli, and this just made it even better. I dished them both up with some pitta bread and houmous. Delish.

We also finally got around to de-cantering our sloe gin and having a taste! We made this in a very rushed five minutes back in late October, before heading out to the theatre. Poking berries like mad people and swishing them around with sugar and gin. It has sat in the loft for the past few months, being swung and turned every so often and I am very proud of our first alcohol-making attempt! The little bottle is going to be a gift for a friend, and the larger bottle is for us to enjoy.

This weekend actually seemed to go on for such a long time, and in a good way! I can’t say that very often. I kept myself busy because I could see it being one of those weekends where my mind races at 100 mph and I can’t keep up with it and end up sinking. Spending time with Mr T was lovely, relaxing and watching various movies and random episodes of the US Office.

This week I don’t have too much planned; this is the year of saving so I am trying to refrain from going out as much. I have the soup run on Tuesday but nothing much else planned for this week. I have another dinner recipe which I might try out this evening, but other than that just job-hunting and making the most of the new Netflix subscription Mr T set up at the weekend!

I hope you all had lovely weekends and waking up this morning wasn’t too hard! Have a lovely week ♥
