WIAW – Third Time’s a Charm

It’s that time again! Here are some eats from my week so far!

I’m trying to break out of my breakfast routine and have a few new combinations, and so this week I had my beloved vanilla soya yoghurt, with sliced banana.

Lunch was a bowl of lettuce tossed with diced yellow pepper, cubes of smoked tofu, roasted veg couscous, black olives, gherkins, tenderstem broccoli and a dressing of balsamic vinegar. A blob of houmous on top and a couple of crackers added some extra deliciousness!

At the weekend we went to a friends house for dinner, and they created a Mexican masterpiece! This included battered avocado, guacamole, mango salsa and a mixed bean and sweetcorn salad – amazing!

Followed by pretty much the best dessert I’ve ever had! Chocolate-peanut butter-pretzel treats!!

These were two pretzels, sandwiched with peanut butter fondant and half-dipped in chocolate. The stuff of dreams!

I hope that everyone had a relaxing long weekend and the week so far has been good! My weekend was a bit up-and-down but I did a fair bit of writing, baking and blog-reading, so I can’t complain. My car passed it’s MOT which was such a huge relief! Plus I spent time with friends, played Bananagrams and made barbeque ribs!
