The week is speeding along quite nicely, it seems. On Monday evening we went to see Sharon van Etten play downstairs at the Komedia, which was amazing. She is adorable, and her voice is just perfect. Last night I had the soup-run, which was lovely in the sunshine, and then an evening in with Mr T. Not too much has been planned for the week as we have a pretty hectic weekend; my current office is closing on Friday, so we are finishing early and heading to the pub for some farewell drinks. Saturday me and Mr T are hosting a Eurovision Party! Sunday we are spending the day with his family, and in the evening hoping to see the new Wes Anderson film at the Duke of York. But enough talking! Here are my daily eats for this week:

I wake up, read through any emails/ tweets etc which have come through overnight, check the weather and then feed Rasputin. He’s on light catfood because he’s getting a bit of a belly. A couple of friends came to visit at the weekend and on the way to the flat they asked if he had changed since they had last seen him. I said he had gotten bigger – and they asked, height or width? Down, I replied. His belly is a-dragging.

Once I’ve fed Ras I make myself a coffee and head back to bed with my laptop. I usually add some photographs to a blog draft, do some writing or catch up with my favourite blogs.

Then I’ll prepare my food for the day; I usually eat my breakfast and my lunch at my desk, so I organise this in the morning. For breakfast I have been enjoying vanilla soya yoghurt (♥) with chopped strawberries, a handful of dates and a summer berry flapjack from my Graze box.

(It didn’t look quite this neat and tidy when I arrived at work to eat it. But at least the fruit was well coated in yoghurt!)

During the morning and afternoon I snack on a clementine and a braeburn apple. I never used to eat fruit – I think because it doesn’t come as part of a meal, like vegetables do, I never used to think of eating it. Now I love to snack on plenty of fresh fruit!

Lunch is always salad, with an added extra which changes usually daily. This looks kind of gross today, but I assure you it wasn’t! It’s some leftover peanut stirfry which Mr T made a few days before, and we had some leftovers. Yum! With some tenderstem broccoli <3

After lunch I went for a walk to enjoy the gorgeous sunshine! It was so nice to get out of the office and actually have the warmth of the sun to keep me company. I am really into smoothies at the moment, so picked up a berrylicious bottle in Sainsbury’s. Yum!

I also had one of my favourite treats: a Trek bar! Delicious, best snack in the world.

For dinner I made one of my favourite salads: it’s a thai cucumber salad, from Jamie’s 30 Minute Meals. It’s absolutely gorgeous; freshly grated ginger, soya sauce, peanut oil, coriander, chilli – and ribbons of cucumber. Wow. With this I made some chickpea and coriander burgers, which were made by processing chickpeas, ground cumin, fresh coriander, red onion, seasoning, a little oil and soya milk, and breadcrumbs. I stuffed all of these goodies into a pitta with salad.

I have a total sweet tooth, but I do worry that maybe I eat/ drink too much sugar everyday? I know that it’s all natural sugar (apart from in the soya yoghurt and the flapjack, which was a one-off), but I’m not sure if I should be consuming quite so much?

Anyway, I think the sunshine might be sticking around for a few days so it’s time to start planning BBQs and getting some colour to these pale and pasty legs of mine! I hope you can all enjoy the sunshine, even if only for a swift lunch-break stroll!

    I love your blog, your choices are healthy, suitable for vegetarians and most importantly not repetitive which can get really boring. I try to introduce different veggie/vegan foods but its not easy and usually stick to what i know/trust. I think your body will let you know if u are eating to much sugar by how you feel/energy levels etc but u seem to have a great balance of really healthy nutritionally rich foods and natural sugars. I would probably ruin it by sticking some chocolate in.. such a sweet tooth! :)

      Thanks so much for your reply! I try to stick to a healthy diet, but don’t worry – chocolate does sneak in fairly often, too!

    I also love having Trek Bars. They are so delicious :) Is the berrylicious smoothie similar to the innocent ones? I’m looking for new snacks/ drinks and would quite like to try them. HAPPY WIAW :)

      Yeah, it’s pretty much the same as the innocent ones – very nice, indeed! Innocent smoothies aren’t vegan, unfortunately (they use fruit which is coated in shellac) so I was super happy to see Sainsbury’s labelling their as vegan!

    I think the same thing about my sugar too, but then I know its almost all natural sugars from fruit and things and it makes me happy so why not? Jealous you saw Sharon Van Etten, I love her!

    Is your cat named Rasputin? That is just the best thing I’ve heard all day. snack wrap and soy yogurt yum!! I ate an entire pot of plain soy yogurt with cinnamon for breakfast. Perfect.
    I try to limit my sugar as well and do so by limiting my processed foods and checking ingredients. Natural sugars are okay, but processed white sugar is something I attempt to stay away from!

      I don't really eat many things that contain 'real' sugar – occasionally some dark chocolate or breads which contain sugar. I prefer natural sugar :)

    I think that my cats might be in need of a switch to light food too!
    I love trek bars, the peanut used to be my favourite but now it’s all about the berry!
    With the sugar, I think that if it’s natural, and balanced with other things, then it’s not a problem unless you’re not feeling well. And your non-sweet food always looks delicious and nourishing :)

      Ras has been on light food for a while now, I think we might just be feeding him too much…!

      I never really liked the peanut flavoured Trek bar – but the berry and cocoa brownie are amazing! I love the cocoa one covered in dark chocolate dreams peanut butter….YUM!

    Wow those chickpea coriander burger wraps look amazing!! And that cucumber salad too! yummmmm! Those two recipes definitely sound great together! Thanks I’ll have to give this a try :))
