WIAW – Granola, Wraps, Socca and Snacks!

HAPPY WIAW!

Thanks to Jenn for hosting my favourite foodie event of the week! I hope everyone is enjoying their week so far. Weather aside, mine’s going quite well! A little stressful at work, and things got a little feisty at the soup-run last night, but aside from that I can’t complain.

I know it is a Fitness Special this month, but I really don’t have anything to add to my last post! I have been sweating along to my DVDs and loving them! There is talk of the possibility of pilates with a friend, though – which I’m quite interested in starting.

Here are my meals from Monday and Tuesday!

For breakfast I have been enjoying a combination of all three things that I bought at the weekend, with plenty of vanilla soya yogurt. Delicious! I love the combination of textures and flavours.

For lunch I used one of the lovely Warburton’s Square(ish) wraps, filled with houmous, lettuce, black olive, sliced gherkin, sweet chilli sauce, cucumber and couscous. With my favourite roasted chickpeas and two pints of water.

This week I invented a new snack. Peanut butter on top of chocolate rice cakes. Oh sweet lord, this is so good!

For dinner I’ve been enjoying making plenty of socca’s! This one is stuffed with chana dahl and grated carrot, served with home-made spicy wedges and boiled broccoli. Yum!

Just behind my plate you can see Rasputin’s favourite toy! It’s a laser-mouse! He could chase that red dot around for hours.

And this was Mr T’s dinner – Fry’s burger in a bun, stuffed with salad, and served with home-made spicy wedges. He had peanut butter and chilli in one, and good old ketchup and mustard in another.

I’ve also been enjoying braeburn apples, Taste the Difference clementines, Pulsin brownies, and my old-faithful Mixed Berry Trek Bars!

I hope that everyone is having a great week so far – we’re half way through and I can almost taste the weekend! This evening me and Trout are hosting a mini dinner party (of one guest!) and he was up until 10.30pm last night making chipotle sauce. It was so cute, and he makes the best mexican food. Tonight we’re serving up mini tortilla wraps with mushrooms. Well, I say we but really I mean – Trout is serving up an amazing dinner and I am bringing Corona!

    Peanut butter on top of chocolate rice cakes is something I would enjoy. What kind of rice cakes are they? Are they similar to the rice crackers that you can buy? Happy WIAW!

    Oh yum, those chocolate rice cakes have always caught my eye and with peanut butter they must be heavenly! Hope you enjoy your dinner party, it sounds so much fun!

    The squarish wraps make so much more sense than round ones.

    Do british strawberries have a special flavor? Haha!

      No – they’re just labelled as ‘British’ so that we know they were grown here, rather than imported :)
      Though they are usually sweeter and tastier, because they are fresh and in season!

      Socca is my new favourite thing <3
