Life changes so much in the blink of an eye, sometimes you’ve got to catch up with it

This weekend seems to have flown by! It’s been fairly relaxing though, which is the main thing. For breakfast I’ve been enjoying the granola that I bought last weekend, with little blobs of peanut butter, fresh cherries (♥) and a few goji berries and other dried fruits thrown in for good measure.

This is Friday’s dinner: carrot and coriander falafel, salad, pitta bread, houmous and aubergine rice salad. Oh, and some pickled onions too. Yum!

Trout has gone to see Stewart Lee this evening, so me and Ras have been having a catch-up, and I’ve been doing some reading for the Survivor’s Network.

For dinner I made a staple new favourite: socca! This time I baked some squash in large chunks and stuffed them inside the socca, with aubergine chutney and grated carrot, with boiled broccoli on the side. Brilliant!

I’m really pleased that this turned out well – my last couple have fallen apart in the pan, and even though they still tasted fine it was a shame that they looked a bit of a shambles! But this came out great, phew!

We were very lucky with the weather last night! We made it to the pub clean and dry, although it came down so heavily once we had  got comfortable in the beer garden. Thankfully we were sheltered and with plenty of heaters! After a couple of beers we headed back to a friend’s flat for a few more drinks. I had never been to their flat before, and it was absolutely amazing! Such a huge space, with wooden floors which (apparently) were brilliant for skateboarding down, with a great open plan lounge and kitchen. It was really fun to be out, having a few drinks and a few laughs – it feels like so long since I’ve done that! Well, apart from last weekend – but I wasn’t out quite so late then! We didn’t get to bed until around 3am, way past my usual bedtime (!!!) but it was a super fun night.

    How do you make socca hon? Looks fab! I have eaten mainly hummus and cashews and sweetcorn and chilli. I’m in a little rut. A nice rut, but still….

      It’s half a cup of chickpea flour and half a cup of water, plus salt, pepper and ground cumin (if you fancy it). Fry it in a little oil, flip, carry on cooking then fill with yummy things! It’s really versatile!

    Squash stuffed socca is the best! I love it with tahini and kabocha :-) And that breakfast, yum! I had a lovely weekend, very relaxing which suited me perfectly!
