WIAW – Summer Staples!

Happy WIAW!

I hope that everyone is having a lovely week, filled with inspiring & delicious food! As this month’s theme is Summer Staples I have tried to pick some of my favourite summery meals & snacks, to bring a little sunshine to this somewhat dreary summer which we are having.

Breakfast

Includes coffee (of course!) and a bowl of vanilla soya yogurt, with fresh, chopped cherries and a handful of Dorset Cereals’ Low Fat Tasty Flakes. Perfect start to the day!

Lunch

This is probably my favourite kind of lunch to have – a bit of everything in the fridge! We’ve got some roasted vegetable cous-cous, gherkins, salad leaves, rice salad, pitta bread & houmous, sun-dried tomatoes, olives and artichokes. Delish!

You can’t beat a mixture of fresh, zingy salads for summer – I would eat this kind of meal for lunch and dinner everyday if I could! I love the combination of flavours and textures, and pitta bread & houmous will always have a place in my heart ♥

Snacks

I’m still completely addicted to roasted chickpeas!

(I didn’t have two lunches, there is just a cheeky peek of another lunch next to my beloved chickpeas…!)

Dinner

In terms of summery dinners, I always think of risotto of being a summer dish – even though it is stodgy and thick and filling! I think with the right veggies it can sing with spring. Trout made this brilliant vegetable risotto, and I served it with a fresh salad and some home-made garlic bread.

This is another summery dinner that I had this week – a simple salad of leaves, chopped pepper, artichoke, gherkin and radish, with balsamic vinegar and roasted chickpeas scattered on top. And a chunk of bread smothered with houmous on the side. The salad has pieces of basil stirred through, making it the perfect summer meal.

We’ve been loving these sushi balls from M&S lately – in 4 different flavours, and at a very affordable price (£1.69?) they are a great addition to lunch or something fun to snack on in the afternoon!

I hope that everyone has had a lovely week so far! You can almost smell the weekend, and I hope we can have some sunshine. I would like to squeeze in some time on the beach, and walking around the Laines in the sunshine holding hands.

    The lunch conglomeration looks amazing. I do love when a meal looks like you had a whole buffet to chose from and pita bread is always a perfect fit.

    And I am so jealous of the sushi snack pack. Thats something I enjoyed on a daily basis in my semester in Shanghai and I do miss it like crazy here.

      Can you not get any sushi near you, or just not the sushi balls? To be honest I’ve never seen them here before, it’s just at M&S!

        I can get sushi at a restaurant, but not the take away kind, which you can enjoy as lunchpack (or even for breakfast – am I weird? ).

        Haha, breakfast! I guess it’s not too strange, but I’m a total sweet-breakfast girl!

    Those rice balls look great! I haven’t had a risotto in way too long, I used to make a lovely spring one with quinoa instead of rice, I need to get on it an make another me thinks!

      I made one once with orzo pasta, but it wasn’t as nice as good old risotto rice. I love it!
