WIAW – Salads, Snacks & Rasputin

I hope that everyone is having a great week so far! It’s going a little too slowly for my liking, but I think that’s mainly because I have my eye on the end of the month, and all the things that I have to look forward to then, so for now I am trying to be patient.

This week we’ve been enjoying lots of fresh salads, bright with sharp, acidic dressing and combined with plenty of delicious additions. We’ve been planning our America Roadtrip, had an adventure with the washing machine and a picnic on the living room floor.

Here are my meals from Monday!


Breakfast was a bowl of Dorset Cereal’s Low Fat Tasty Flakes, topped with a handful of blueberries and some chopped strawberries, with soya milk and a strong coffee to start the day with!


In the morning I snacked on a braeburn apple.


This lunch was so good! I used my favourite wraps – Warburton’s Square(ish) Wraps – with houmous, lettuce, beetroot coleslaw, roasted vegetable couscous, sliced gherkin and black olives. I had the wrap with some potato salad and an extra gherkin on the side.


After lunch I enjoyed a chocolate rice cake topped with peanut butter, and a couple of clementines.


Dinner was another one of our classic combinations of fresh salads, warm bread and delicious houmous. Not too different from my lunch, we had edamame bean salad, roasted vegetable couscous, baked falafel, sliced gherkin, potato salad, beetroot coleslaw, houmous and sliced, fresh bread. So good!

    Woah. That’s a very dark chocolate rice cake. I’ve never seen one like that. Your dinner and bread look INCREDIBLE! I hope it was as tasty as it looks!

    You have the best savory vegan foods around the WIAWs. I wished I had something like this wrap in my bag for lunch today… oh man…

    Oh yum that looks fab! Do you buy lots of the little salad pots? I think I need to go to M&S and treat myself to a fridge full for the week!

      Yes – we buy a few tubs from M&S and Waitrose for lazy (but delicious!) dinners – the edamame bean salad from Waitrose is unbelievable!

      The bread was really good! We usually buy it from Real Patisserie (a chain of independent bakers in Brighton) but this was from Waitrose x
