Brunch for Lunch

One Sunday morning Trout was flicking through one of our many (many) cookery books, when he stumbled upon a recipe that caught his eye. We popped out for the ingredients (and a few other things… hello new underwear!) and he prepared a fantastic breakfast/brunch/lunch for us. The combination of flavours were perfect together, and I loved the sauce! The recipe is from a book that I bought Trout last year called Vegan Sandwiches Save The Day. One of the writers also published Hearty Vegan Meals for Monster Appetites (which I also bought for Trout) and the recipes in both books are fantastic. Really simple to follow, but everything we’ve made so far tastes incredible!

I’ve been a bit quiet on the blog and Twitter lately – work is getting busier, as has freelance work, so I’m finding it hard to juggle everything and come up with original, interesting content. I’m trying! I have some polaroids from the weekend that I need to scan in and post up, which I’m looking forward to. I’ll also try to keep up with my regular posts; WIAW and Wednesday Wishes. At the same time I also really want to take a break and think about what I want my blog to really be about – sometimes I just think it is so utterly boring, but for the most part I do enjoy writing it, and it gives me a reason to keep taking photographs.

    Brunch is the best. It is your blog, so it’s whatever you want, but I’m having the same problem. I remember why I started mine but it’s kind of strayed from that but that doesn’t mean I want to stop writing in it. In the end it is your blog and it’s whatever you want to make it. I always enjoy all your photos.

    These look yum! I’ve been doing brunch for breakfast, actually – a sort of mediterranean take on breakfast: marinated roasted veggies, hummus, pita, and fresh fruit. It’s been a nice change. Gotta mix things up once in a while!

      I love scrambled tofu for brekka, but not sure I could go quite as savoury as that in the morning!!

    I’ve never been into savoury foods at breakfast/brunch time so having them for lunch or dinner suits me much better. Made tofu pesto omelettes for dinner last night actually which I guess qualifies as brunch?
    Go easy on yourself r.e. the blog. It’s great that you’re busy with work!

    Mmmm that looks tasty! Your blog is far from boring, I always enjoy reading your posts! Sometimes life just gets in the way, don’t stress about it though and don’t force yourself to do stuff, this space is suppose to be the fun part x

    I love your blog, it’s definitely not boring at all and I think it’s really original! I sometimes feel that way about mine, so I guess it’s one of those things we each feel sometimes.
