Independence Day!

A couple of weekends ago Trout and I headed up to London for the day. A friend was having an Independence Day BBQ in the evening, so we decided to travel up earlier in the day to make the most of the sunshine and do a spot of shopping.

I walked up and down Regent Street almost every day for nine months or so – and yet never noticed this building!? It’s so amazing – tucked away in the sky, looking down at all of the many (many) tourists and people who call London their home. I love that you can see a tiny glimpse of the top of a red bus – and yes that would be my clumsy thumb print in the corner. Whoops!

We had lunch at Wahaca – which, although went better than the last time we dined there, still wasn’t really what I was hoping for. I think that the amount of vegan options are less than last time, but the quality of the food was still great. We shared a black bean & corn salsa salad, which came in a crisp tortilla shell, tortilla chips and guacamole, chunks of sweet potato in smoky caramelised mojo de ajo – absolutely incredible! – and soft tacos.

 

The BBQ in the evening was so much fun! We had delicious food, pasta salad, burgers, played silly games and had sparklers – what more could you want! I was super impressed with the American flag cake that someone made – so pretty. We bought a Cat and the Cream cake from Wholefoods on the way, and oh my gosh it was so good! I’m a big fan of their cupcakes, and the large cake was even better. Gooey chocolate, yum. They are releasing new flavours in August and I’ll be first in line to try them.

I can’t believe it’s Friday already! I hope that everyone is having a great week and looking forward to the weekend. We have plans to go boating tomorrow in Lewes, with a picnic. It’s sounds so lovely and British! Other than that I think it will mostly be spent soaking up the sunshine. I have some terrible tan lines on my feet thanks to wearing the same sandals everyday, so I really need to work on evening that out! And I think ice-cream definitely needs to be on the agenda at some point.

    This looks like so much fun! I’ve never celebrated Independence Day I guess because it’s considered to be strictly American. Having said that I did celebrate Thanksgiving whilst in America a few years ago and loved it.

      We only celebrated as we have American friends – but I do quite like jumping on their bandwagon, especially when it involves BBQ and cake!
