Life lately in the sunshine, and the kitchen

Life lately has involved spending time on the beach, mostly. We’re trying to squeeze in as much time in the sun and as many BBQs as possible before this weather leaves us. Trout took almost all of these photos, and Jess took a few of them, too – actually I think I only took a couple! It’s so nice to have other people’s perspective on the blog. I definitely want to take more pictures of friends – I always feel a little strange taking their photograph, but it’s nice to look over.

Spending time with lovely friends, buying cans of beer en route to the beach and watching the sun set across that shore. Hello summer!

I’ve also been making a real effort to cook more. Last Sunday I pulled out a few of my favourite cookbooks, and picked out a couple of recipes to try. They were both from one of my favourite food writers – Celine Steen – who is so talented, both in the kitchen and behind the camera. She also has a blog, which you should check out if you haven’t read it before.

Earlier in the week I gushed about Celine Steen’s blog and cookery books on my paperbagblog Facebook page. If you’ve not Liked my page already, it would be great if you could! This is the first time that I’ve cooked with jackfruit, and I’m already completely addicted! It’s such a strange ingredient. You buy it tinned, either in water or brine (not syrup!) and it soaks up all of the flavours you give it. After an hour of cooking in broth, sauce and spices you leave to marinade and then fry off – it turns into a kind of pulled pork/chicken/tuna texture (from what I can vaguely remember, the last time I ate meat was almost 14 years ago!). I stuffed it into a baguette with coleslaw and a creamy sauce, and served with garlic truffle fries. Delish!

On a more healthy note, I was browsing through Pinterest and a couple of recipes caught my eye. This is grilled cabbage with a bright and spicy lime dressing, roasted beetroot on grilled bread with a balsamic glaze and torn mint, baked squash and salad. The cabbage is definitely going to be making a re-appearance – the edges are crisp and the inner leaves are tender and full of flavour. So good!

    I love all the pictures. It’s always awkward taking pictures of friends, but I’m always just like, “I want to capture the memories!”

    Love your beach photos. That evening light is gorgeous :)
    The cabbage and beetroot crostini thing were recipes I pinned too! It all looks super tasty.
