Life Lately

Trout’s been away for a couple of weekends so I’ve been catching up with a bit of ‘me-time’. It’s strange to have a few hours to myself – Trout and I have been living together for three years now, and I left home at 21, so am more than used to having my own space and organising things for myself. I guess when you live with someone you just get so used to doing things together, or doing nothing at all. It’s kind of nice to go to a coffee shop and not want to rush home to see him – just to relax with my book.

Not last weekend, the weekend before, Trout was away attending the stag do of my soon-to-be brother-in-law (that sounds weird to write! I can’t wait, though), and this weekend he’s in Spa watching the F1, so I’ve been relaxing in my jim-jams, resting up after being unwell last weekend, catching up with laundry and a mountain of washing up and listening to music that reminds me of 2008-09, living with my best friend, sitting in our kitchen in Kingston, baking, planning trips to the market and the coffee shop, or heading into London for some gallery-hopping. I sure do miss living with that girl. I miss her being in England more than ever lately.

Life lately has also involved trying a lot of new recipes, and – for me – getting back into the kitchen. Trout and I are a little obsessed with Mexican food – after Indian food, it’s our true love. Although, when we were in America I thought I would go crazy for all of the opportunities for burritos but to be honest – I got a little bored of them. And I only ate four in three weeks! I even chose a dirty Subway over a burrito at one point. I think Trout must have eaten a dozen or so. That’s a combination of regular burritos and breakfast burritos, which are an incredible invention. I remember sitting by the water in New York with our boxes of breakfast from Cinnamon Snail (a vegan food truck) and I tucked into my pancakes with blood orange syrup, and Trout unwrapped his brekka burrito, stuffed with scrambled tofu. It was one of the funnest memories that I have from America.

Here are a couple of photos of the Mexican food we’ve been enjoying lately. First up we have chilli cheese dawgs – so good! And next is a bowl of nachos which we had with enchiladas. Trout stumbled upon a great ‘cheese’ sauce recipe a few weeks ago so we’ve been going crazy for that lately.

Today will mostly involve coffee, writing, and travelling to my parents house for more birthday celebrations. Last night I went to one of my favourite restaurants in Brighton – Archipelagos – with a group of friends, which was so lovely. We took up half the restaurant and the hummus was flowing, as it should have been. Tomorrow I’m visiting my grandparents in south west London, which I’m really looking forward to. I don’t get to see them nearly as much as I would like to, which I feel bad about.

    Sounds lovely! One of my early “dates” (not that I would call it that) with my now boyfriend was to Chipotle and if I had my way guacamole would cover everything, so yes totally with you on the Mexican front! Do you have a recipe or link for the “cheese” sauce? x

      Totally agree with you there! The best recipe is from Thomasina Miers’ cookbook, Mexican Food Made Simple. It’s a great cookbook, definitely recommend. I can find out the link – might do a blog post on it!
