Essential Vegan Cookbook

When I did a little tour of my flat a few weeks ago you may have spotted just how many cookbooks I have, especially vegan ones. You can never have too many, right?! And as much as I like stuffing my face with pizza and chocolate, I will always have a soft spot for healthy, nutritious recipes. I love nothing more than a salad piled with grilled veggies, fresh spinach and roasted chickpeas. I love raw desserts almost as much as I love baked puddings and cake – I find they have loads of flavour, and I feel like they are treating my body kindly.

I can’t say that I’ve ever eaten any Brazilian food, but I’m a big fan of trying any new cuisine, and a cookbook by Brazilian vegan chef Vanessa Almeida caught my eye. She really knows her stuff, with a background in nutrition studies, specialising in veganism, the book has loads of added extras to give you an insight into how the ingredients are working with your body to make you healthier. Have a look through her website to find out more about Vanessa, and get an idea of her recipes and style of cooking – everything looks so good! The mushroom tofu tower is definitely something I want to try cooking.
